Our Savoury Breakky Muffins ( Vegetarian )

We have got a quick and easy recipe for all those time deprived warriors out there! I know as a new momma I'm always struggling to find time to make a healthy dish that are filling and nutritious. Well never fear because this savoury egg muffin recipe is super nutritious, convenient and delicious. It has high amounts of protein and good fats keeping you full and kick starting your metabolism into high gear. What people don't realise is you need to eat smaller regular meals to keep your metabolism firing and when your tired and time deprived we tend to reach for high sugar, carb loaded foods.

 

 

 

Ingredients : recipe makes 6 

Four free ranges eggs
1/2 cup of lite milk
1 tsp of garlic
1 spring onion diced
1 tomatoes diced

1 small bunch of parsley
1/2 small mild red chilli chopped finally (optional but good for firing metabolism)
salt and pepper to season
can add ham off the bone for a non vegetarian option

 

Method:

 

In a bowl whisk all ingredients until combined well and pour into muffin papers. 
Bake in the oven on 100 degrees for 20-30 minutes until golden brown. Its that easy!

These will store in the fridge for three days and just need to be warmed up when ready to eat.
