Sushi Bowl Inspiration ( Vegan )

Today my body was craving light but nutrient dense foods. As I've said previously I'm not vegan, not paleo, I don't follow a specific resume but I do listen to what my body is trying to tell me. People have the assumption salads don't fill you up but if you pair the right ingredients and address you're macro nutrient ratios I promise you, you will feel full and satisfied. This recipe is light but full of nutrition! This bowl alone contains good fats, plant based protein, complex carbohydrates, fibre plus its LOADED with vitamin and mineral micronutrients.

 

Ingredients: 

 

1/2 avocado

1 carrot peeled into ribbons

1/2 cucumber peeled into ribbons

Large handful or baby spinach

1/2 cup of quinoa

1/2 lime

1/2 teaspoon of ginger

1/2 teaspoon of garlic

1/4 cup of soy or tamarin ( gluten free )

1/2 teaspoon of raw sugar

1 teaspoon apple cider vinegar

1 tablespoon of hemp seeds

sesame seeds for garnish

 

Method:

 

In a saucepan add your quinoa and simmer for 10 minutes, set aside once cooked to cool slightly. In the meantime, in a  medium sized bowl add your baby spinach and top with you carrot, cucumber, hemp seeds and avocado. Once quinoa is cooled top alongside your other ingredients, now its time to make you're dressing. In a mug or small bowl add your soy, vinegar, sugar, garlic and ginger, stirring until all ingredients combined and sugar is dissolved. Drizzle on your dressing and your done! Enjoy xx
