Chimi Churri Chicken Skewers with Healthy Homemade Fried Rice

This accidental fusion of south american and asian quisine turned out more amazing than I could ever imagine.


The Chimi Churri marinade would suit all types of meat and feel free to compliment with a lighter salad but in our household tonight we were craving carbs like no tomorrow. The fried rice accompanied with this is a very clean option and much healthier when made yourself. Portion control is also super important, no matter how much cleaner this version is, if you consume too much carbohydrates for dinner before bed you're body will store it for energy later. 1/4 to 1/2  of a cup of this friend rice is a reasonable serving size depending on your goals and exercise routine BUT remember, cars are not bad, its just all about timing, and if consumed don't feel guilty. Guilt when eating feeds your negative relationship with food but if your eating real nutritious, home cooked food there is nothing to feel guilty about! Feel good knowing you are feeling your body with energy and nutrients :).





2 free range chicken breast ( organic if you can source it )

1/2 red capsicum

4 rosemary sprigs

2 cloves of garlic

1/2 bunch of parsley

1/2 bunch of coriander

1/4 cup of lemon juice

1/2 cup of olive oil

1/2 red chilli, remove seeds for a more mild marinade

1 pouch of organic brown rice

1 free range egg

1/4 bunch of spring onion

1 carrot

1 cup of chopped spinach

1 tablespoon of gluten free tamari sauce ( soy sauce alternative )

Salt and pepper to season both chicken and rice.




Chicken skewers


Cut your chicken and capsicum into cubes about 4cm, placing them on the rosemary skewers then pop aside. To make the marinade we place your parsley, coriander, garlic, chilli, lemon juice, olive oil, salt and pepper into a high powered blender until a paste has formed. Rub the marinade onto your chicken skewers 6 hours before cooking ( Yes you can use is straight away and will taste amazing but the longer the flavours soak into your skewers the deeper the flavour). Cook skewers for 5 minutes on a George Forman or similar type grill.


Healthy Fried Rice


Chop your carrot into small cubes and boil until soft. In a saucepan sauté some garlic and spring onions until cooked, add your egg and whilst its cooking stir it around mixing the egg yolk and whites together, chopping as you go. Place your organic brown rice pouch into the microwave for 90 seconds. Add you're spinach and carrot to the saucepan along with the rice and stir to combine. Add tamari sauce, salt and pepper to season stirring again until all the ingredients are coated and your DONE!
