I am obsessed with all things pastel at the moment and even more so bounty bars! Although naughty food in moderation is perfectly okay, stuffing your face full of bounty bars in large quantities isn't good for my own personal training goals. So I created a recipe that contains plant protein and good fats to keep me energised whilst using pretty pastel colours to make them look delicious. These bars are so good you will want to eat more than one! The recipe is super adaptable to add other ingredients if you have special dietary requirements.
1 block of Loving Earth Milk Chocolate
or your favourite vegan chocolate for melting
1 cups of Desiccated coconut
1/4 cup of Almond meal
1/4 cup of Vanilla Vegan Protein Powder.
1/2 cup of Coconut oil melted
1 tsp of Nutra Organics 'Velvet Latte' ( or pink colouring gel )
1 tsp of Nutra Organics 'Mermaid Latte' ( or blue colouring gel )
1-2 tablespoons of authentic Maple syrup or Honey
Melt the coconut oil in the microwave for 20-30 seconds if solid. Seperate the oil into two bowls and mix each bowl with each nutra organics latte mix or colouring, staring until you have a die. Add half of your coconut, protein powder, almond meal to each bowl of coconut oil along with your sweeter. Mix all ingredients together until the ingredients are combined, pastel in colour and sticky. In a lined baking tray place some of the pink and blue mixes on the bottom and opposing colours on the top to create a rainbow. Freeze for 10-15 minutes until hard.
In a heat proof bowl over boiling water break up your chocolate into small pieces and stir constantly to melt the chocolate. I add a little extra coconut oil once the chocolate is melted to stop it from solidifying and burning. Once the chocolate is fully melted remove from the heat and take the coconut rough from the freezer, cutting into bite size pieces or bars.
Using a fork, dunk the frozen coconut rough into the chocolate until fully covered and place on a tray to refrigerate .
Remove from the fridge when ready to eat.
